This is such a simple dinner recipe. It takes a little patience during the cooking time, but the preparation and assembly of this dish are incredibly fast (and easy). It is perfect for a weekend meal... especially during the colder months when you're not afraid that the oven will be turned on a little. And, it's one of those dishes that will fill your home with fabulous aromas during cooking.
I generally prefer crispy green beans, but I really like the way beans (and onions) are caramelized and deeply toasted in this dish. I add a little fresh herbs in addition to the Italian dressing requested in the recipe, but it's always amazing without the herbs if you don't have them on hand. (The sausage and the Italian dressing do a great job of seasoning everything by themselves - herbs just add a little something special.)

Ingredients:
1 pound smoked sausage, cut into large pieces2 1/2 pounds red-skinned potatoes, rubbed and cut into large pieces
10 ounces green beans (fresh or frozen)
1 large onion, peeled and sliced
1/2 cup good quality Italian dressing
1 tablespoon fresh rosemary and thyme leaves (optional)
Instructions:
Preheat the oven to 375 degrees. Grease a very large baking dish / baking sheet with a non-stick spray or a little olive oil.In a large bowl, add sausage, potatoes, onions and green beans. Pour in the dressing. Season with a little salt and pepper. Sprinkle in herbs (if using) and give everything a good mixture or stir.
Pour into baking dish and cover tightly with foil.
Bake for 30 minutes. Remove from oven. Remove the foil and stir gently to turn the ingredients into the baking dish.
Return the baking dish to the oven (uncovered). Increase the oven temperature to 400 degrees. Bake for an additional 35 to 45 minutes (or until potatoes are a little golden and everything is fine and roasted). Stir several times during this last cooking to make sure everything roasts evenly.
